Hey Friends Hey!
I love bread! Please give me all the carbs! But in real life, my health and waistline are screaming, "No, Girl! Step away from the carbs!". Honestly, it is pretty hard for me to give up on the bad carbs like delicious bread and deep fried potatoes! However, I try. I promise, I really do. So today, lets just go a head and replace the bread with greens, Romaine!
I send my "healthy food" pictures to my friends and they all say, "ugh, it doesn't look good". So look at me turning my healthy food into pretty dishes! Yay!
On my journey to live a healthier life, I try to find things that will make me happy while eating but also not make me feel guilty after. This dish is probably one of the quickest and easiest things to make and still feel good about. Say what you want, but I'm using turkey bacon, extra crispy; hold the judgement! For all of you that love swine, that is fine! Just remember to make your bacon extra crispy. I mean the last thing we want it soggy bacon in our lettuce wrap, because essentially, that's what it is.
Ok, enough of my babbling!

You will need:

Romaine Lettuce (cleaned and dried)
2 roma tomatoes (cleaned, halved and sliced)
2 boiled eggs ( sliced)
2-4 strips of bacon, extra crispy
For the aioli: this a cheat version

2 TBSP mayo
1 tsp minced garlic
2 tsp lemon juice
pinch of black pepper
Directions:
1. In a small bowl, mix all of the ingredients for aioli until well incorporated.
2. Lay out romaine, layer tomato and eggs on top of romaine. Top with bacon.
3. Drizzle aioli over the "blt" and you are ready to eat!
